Frito Chili Pie

Here's my meal lineup for the week. I'm very good at keeping the "family" meal under $10. So good that I'm getting ready to try to get a cookbook published. I know how hard it is to get published, so I'll try a cookbook before my novel. I think it's really quite thrifty to feed a family of 8 for under $10. I like thrifty, don't you? And, hey, if I can get something published, I can afford some steak once in a while! ha.

Monday--Frito Chili Pie (no, not nutritious, but fast as there were lots of activities today)
Tuesday--Chicken fajitas
Wednesday--Taco Salad
Thursday--Hamburger Stew
Friday--Potato Soup

Puerto Rican rice and beans I cooked last night, fried sweet plantains, and and apple crisp!

At the Little League Ballpark around here the most popular food (with both kids and adults) is the 'Frito Bag'. It is basically one of those portion sized bags of Fritos, with chili and cheese on top of the Fritos; you eat it with a spoon.

Sounds similar to your Frito Chili Pie...maybe you should sell it!

Yes, that sounds just like what I make. Fritos on the bottom, chili (homemade, of course), then shredded cheese. Sometimes I make cheese sauce instead of shredded, but that does take more time. How much does a serving cost for one "Frito Bag?" I made a whole batch of chili, bought two bags of Fritos, and one small bag of shredded cheese for $18.90. These ingredients made 20+ Frito Pies. This makes each serving less than $0.95. So, last night I fed my family for that "less than $10" thing I've been talking about.

I think they charge $1.50 or so...they probably buy the chip packs in bulk and the chili tastes like Hormel (which isn't homemade but isn't bad tasting either).

Tonight we are having grilled chicken, baked potatoes, breadsticks and veggies. Tomorrow will be leftover chicken and spaghetti from the other night. I usually do not know what we are having till I wake up that morning, if even then. I love to cook, but running around with the kids is so hectic at times they get poptarts for dinner occasionally. I wish I was as organized as you Lisa.

It really helps me to be a better person (no stress because I know what's going on and I'm less grouchy) if I have organization. I usually make my weeks meal schedule on Saturday. It does get altered, such as we didn't have ck fajitas tonight, we had left over frito chili pie, but at least there was some sort of plan, even though it was changed at the last minute. The not knowing drives me crazy, the change in plans is much easier for me to handle. I'm guessing I'm not more organized, you just have more patience than I, Cath.
